Ingredients:

  • 3 kg lamb trotters (Paya)
  • 100 g saffron
  • 100 g ginger
  • 50 g garlic
  • 20 g cumin seeds
  • 500 g yogurt
  • 10 g green cardamom
  • 5 g cloves
  • 10 g cinnamon
  • Salt to taste

Method:

  1. Wash the lamb trotters under cold running water.
  2. Blanch them in hot water, removing impurities.
  3. Heat a deep pot, add trotters, whole spices, and salt.
  4. Stir in yogurt and let it cook on a low flame for about 6 hours.
  5. Once fully cooked, garnish with almond flakes and coriander. Serve hot!

2. Kachhe Gosht Ki Biryani

No Eid feast is complete without a fragrant and delicious biryani. This recipe uses raw marinated mutton, allowing the flavors to develop beautifully as it slow-cooks with rice.

Ingredients:

  • 1 kg Basmati rice
  • 2 kg baby lamb
  • 300 g yogurt
  • 1 kg sliced onions
  • 300 g desi ghee
  • 5 g black cardamom
  • 5 g cloves
  • 200 g ginger-garlic paste
  • 2 g rose water
  • 2 g Kewra water
  • 1 litre lamb stock

Method:

  1. Heat ghee in a Lagan (traditional cooking pot), add whole spices, and sauté onions until golden brown.
  2. Add ginger-garlic paste and meat. Braise well.
  3. Whisk yogurt with spices and mix it in.
  4. Pour in lamb stock and let it cook until the meat is tender.
  5. Cook rice separately until 80% done, then layer it over the meat.
  6. Garnish with saffron, brown onions, mint, and coriander.
  7. Seal the pot and cook on Dum at 180°C until fully done.

3. Gosht Ki Nihari

A dish that symbolizes Eid celebrations, Gosht Ki Nihari is a slow-cooked mutton curry packed with spices and rich flavors.

Ingredients:

  • 1 kg mutton curry cut
  • 500 ml mustard oil
  • 250 g onion (sliced)
  • 250 g onion paste
  • 25 g ginger & garlic
  • 10 g coriander powder
  • 2 cloves
  • 2 bay leaves
  • 10 g turmeric powder
  • 20 g Degi Mirch
  • 500 g ghee
  • 1 litre mutton stock
  • 2 ml rose water
  • 2 ml Kewra water

Method:

  1. Heat mustard oil in a pot, add whole spices and sliced onions. Cook till golden.
  2. Add mutton, onion paste, and let it release its juices.
  3. Mix in curd, Degi Mirch, turmeric, and coriander powder.
  4. Pour in mutton stock and let it simmer for at least 4-5 hours.
  5. Before serving, add rose water and Kewra water for an aromatic touch.

4. Chicken-Kori Sukka Biryani with Samak Rice

This unique biryani combines the flavors of Mangalorean-style chicken sukka with nutritious Samak rice, making it a healthy yet indulgent choice for Eid.

Ingredients:

  • 300 g chicken
  • 1 ¼ cup Samak rice
  • 3 tbsp ghee
  • 1 ½ tbsp ginger-garlic paste
  • 2 sliced onions
  • 1 chopped tomato
  • 50 g grated coconut
  • ½ tsp black pepper
  • 5 cloves
  • 1 bay leaf
  • 3 cardamom pods

  1. Dry roast coconut, cloves, coriander seeds, red chilies, and poppy seeds. Grind into a paste.
  2. Sauté onions in ghee until brown, add ginger-garlic paste and tomatoes.
  3. Add chicken and cook until half done.
  4. Stir in the spice paste and curd.
  5. Add Samak rice, water, and cook for 10 minutes.
  6. Garnish with boiled egg, mint, and coriander. Serve hot!

5. Hyderabadi Haleem

Haleem is one of the most loved dishes during Eid, with its rich, creamy texture and deep, comforting flavors.

Ingredients:

  • 1 cup broken wheat
  • ¼ cup chana dal
  • ¼ cup toor dal
  • ¼ cup moong dal
  • 1 kg boneless mutton
  • 1 sliced onion
  • 1 tbsp ginger-garlic paste
  • 2-3 green chilies
  • 1 tsp turmeric powder
  • 1 tbsp red chili powder
  • 1 tbsp coriander powder
  • 1 tbsp garam masala
  • 5-6 cups water or stock

Method:

  1. Soak wheat and lentils for 2-3 hours.
  2. Heat ghee in a pot, sauté onions, and cook mutton with all the spices.
  3. Cook wheat and lentils separately, then blend into a coarse paste.
  4. Mix shredded mutton with the blended lentils and slow cook for 40 minutes.
  5. Finish with a tempering of cumin, cardamom, cloves, and cinnamon.
  6. Garnish with fried onions, lemon juice, coriander, and mint leaves.
